Recipe: Easy Beef Fajita Bowls

Hi all! Lately I've been getting a lot of questions about what sorts of recipes and foods to pair Oni Rice Spice Mixes with, as well as alternate ways to use the mixes outside of just rice. So today I thought I'd share an easy recipe that uses our Mexican Rice Spice Mix in both rice and as a dry rub for meat!

Here the Oni mix functions as a beef fajita seasoning mix on the meat, but keep in mind that you'll also need to add a bit more salt to your steak to bring out its natural flavour. This is because Oni rice spice mixes are modestly seasoned to better support the flavours of your main dish - but when they're the star of the show like in this recipe, they can use a bit more salt to allow that flavour to shine through.

Ingredients

For the rice

  • 3/4 cup rice
  • 1.5 cups water
  • 1 tbsp Oni Mexican Rice Spice mix

For the beef

  • 1/2 onion, sliced lengthwise
  • 1/2 cup mushrooms, sliced
  • 1 lb steak (I used flank steak but you could also use striploin)
  • 1 tbsp Oni Mexican Rice Spice mix
  • Pinch of salt (to taste)

Toppings

  • 1/4 cup grated cheddar cheese
  • 1 handful of crushed tortilla chips to garnish
  • 2 tbsp guacamole

Directions

  1. Make your rice

    Add your rice, spice mix, and water to a rice cooker and turn it on. Alternatively, add your rice, spice mix, and water to a pot and bring to a boil. Once boiling, reduce to a simmer and cook rice until liquid is absorbed.

  2. Saute the onion and mushrooms

    Pour 1/2 tablespoons oil in a pan at medium-high heat. Add the onion and mushrooms, topping with a pinch of salt and stirring. Let saute for a few minutes, until softened.

  3. Season the steak

    While waiting for your onion and mushrooms, lightly salt and pepper your steak, then evenly coat your beef with 1 tbsp of Oni Mexican Rice Spice mix. It should turn a nice reddish-orange colour.

  4. Sear the steak

    Remove your onion and mushroom from the pan. Add a bit more oil then add your steak to the pan, searing it on one side. Flip after a few minutes to sear the other side.

  5. Check steak temperature and slice

    Using a meat thermometer, check the beef for doneness. Remove the beef when done and rest for a few minutes. Slice afterwards.

  6. Assemble the fajita rice bowl

    Assemble your bowl! Add a scoop of rice, then top with onion and mushroom, grated cheddar cheese, crushed tortilla chips, steak strips, and a dollop of guacamole. Garnish with extra hot sauce if desired.
